About Sad Bird Coffee
Sad Bird Coffee offers premium, low caffeine coffees designed for high performers and health conscious individuals who want to enjoy specialty coffees without over caffeination. Learn more about us in the Mission section.
We provide intentional caffeine levels (Uncaffeinated, Quarter Caffeine, and Half Caffeine Blends) while maintaining the rich taste and ritual of great coffee. Our coffee is specialty grade and uses a chemical free, water based decaffeination process.
No, we’re not anti- caffeine but we are against over caffeination. Caffeine is a powerful tool when used intentionally and in the right doses. Excessive intake can lead to dependency, diminished benefits, and health risks. We provide low caffeine options so you can enjoy coffee without the downsides of over caffeination.
Product Information
(Approximate caffeine content per 8oz cup based on standard drip coffee)
- Uncaffeinated – 99.9% caffeine free
- Quarter Caffeine – 25% of a regular coffee’s caffeine (~24mg caffeine)
- Half Caffeine – Half the caffeine of a standard cup (~47mg caffeine)
These numbers can vary slightly depending on brewing method, bean origin, and grind size.
We use a 100% chemical free, water based decaffeination process to preserve the full flavor of our beans while removing caffeine.
Unlike conventional methods that use solvents like methylene chloride or ethyl acetate, our process relies on pure water, temperature, and time to gently extract caffeine while keeping the coffee’s natural oils, flavors, and aroma intact. This ensures you get a rich, full-bodied cup of coffee without the negative effects of over caffeination.
Our approach maintains the complexity and depth of flavor you expect from specialty grade coffee, meaning you don’t have to compromise on taste when choosing a low caffeine option.
We currently offer whole bean coffee to ensure peak freshness.
Brewing & Preparation
Our coffee works with most brewing methods, including pour-over, French press, AeroPress, and espresso machines. Our current offerings are medium roast, which provides a balanced flavor profile and works well across different brewing styles. Since medium roasts have a more versatile extraction, we recommend brewing to your preferred strength and taste
Yes! Our medium roast coffee performs well as espresso, especially the 50/50 Blend for those who want a balanced caffeine kick. Since medium roasts are less oily than dark roasts, they may require slight grind adjustments for optimal extraction. Expect a flavor profile that’s smooth, slightly sweet, and well-rounded, making it great for straight shots or milk-based drinks like lattes and cappuccinos.
Caffeine & Health
Excess caffeine can lead to jitters, anxiety, disrupted sleep, and dependency, making it harder to maintain steady energy levels. Choosing low caffeine coffee supports smoother energy, sharper focus, and better sleep quality, all without sacrificing drinking good coffee. Learn more about caffeine’s effects in our Science section.

Roasting & Freshness
At Sad Bird Coffee, we roast fresh every Wednesday in small batches to ensure peak flavor and freshness. Our coffee is roasted to order, meaning it hasn’t been sitting on a shelf for weeks before it gets to you. By limiting batches, we maintain precise quality control, so every bag you receive is at its best.
Your coffee comes in a high-quality, vented bag designed to preserve freshness. To keep it tasting its best:
- Store in a cool, dry place.
- The original bag is an airtight container, making it a great storage option.
- Freezing is not recommended as it can introduce moisture.
We recommend drinking it within 3 months of roasting. If you’re chasing the best cup possible, stick within this window!
